September Fav!

Billy and I found this recipe in the September issue of Cooking Light and it is now one of our favorites!! We have already made it a couple times. The best part is it makes 4 servings so we can have it for dinner one night and lunch the next day! Here is the recipe below with some of our tips.
Turkey Burger Pitas with Tahini Sauce
1/2 cup plain 2% Greek-style yogurt (I usually just buy a cup of low fat Greek yogurt, and double the rest of the sauce recipe)
1 tablespoon tahini (sesame seed paste) (We tried not to use this the first time since the paste was pretty expensive - but I gave in and bought it the next time. It definitely made a difference and the paste will last a while!)
1 teaspoon lemon juice
1 garlic clove, minced
Dash of salt
1/4 cup chopped green onions
3 tablespoons finely chopped fresh parsley (we use 1.5 teaspoon dried)
1/2 teaspoon salt
1/4 teaspoon onion powder
1 pound ground turkey
cooking spray
2 (6 inch) whole-wheat pitas, cut in half
lettuce
4 tomato slices (we substitute tomatoes with grilled sweet onions since we don't like tomatoes)

1. Combine first 5 ingredients in a small bowl, stir, and place in refrigerator.
2. Combine onions, parsley, 1/2 teaspoon salt, onion powder, and turkey in a large bowl. Divide mixture into 4 equal portions, shaping each into a 1/2" thick patty.
3. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray (we don't use cooking spray with our nonstick pan). Add patties to pan, and cook for 4 minutes on each side or until done. (We add the sliced sweet onions on top of the meat and cook it all together, blending the flavors).
4. Line each pita with lettuce, 1 patty, onions (or tomatoes.. or both!), and 2 tablespoons of tahini sauce. (I usually line the pita with the sauce first, cut the meat into bite size pieces filling each 1/2 pita with 1/2 patty, then add the toppings!).

Yield: 4 servings (serving size= 1 full pita)

Sweet onions (topping) and turkey patties
Enjoy!
